Enhancing original flavor
Why do this?
Modern food production sacrifices flavor for yield and efficiency. On the crop side, higher yields, shorter growth cycles, and early harvesting reduce sugars, organic acids, and aroma compounds, weakening flavor. US data (1950–1999) show declines in 13 nutrients across 43 fruits and vegetables (6% protein, 38% vitamin B2), paralleling losses in flavor-related compounds. Tomatoes also lost key gene functions, reducing Umami and sweet–acid balance. On the livestock side, rapid finishing and dominance of imported breeds lead to underdeveloped muscle and fat, dulling meat aroma. Furthermore, heat stress causes acidification and softer texture. Additionally, standardized feed weakens milk flavor. Overall, modern farming and husbandry limit flavor compound accumulation, falling short of consumer demand for rich flavor.
How to achieve it?
Yeast extract is rich in amino acids, nucleotides, and peptides, synergizing with existing flavors to boost richness, smoothness, and characteristic notes. Its effect is pronounced in plant-based foods: low-fat peanut paste can retain flavor even with 20% fat reduction, and soy products gain flavor precursors and improved mouthfeel. In meat products (e.g., duck necks, braised meats), it reduces off-notes and enhances umami via synergistic glutamate, IMP, and GMP. Ensenmi supports flavor improvement through product selection, formula optimization, and process alignment. Typical dosage is 0.5%–3%; run trials in 0.5% increments to find the level that enhances intrinsic flavor without off-flavors.
