Off-note Masking
Why do this?
Off-flavors are common and challenging in food processing, undermining taste and consumer experience. Seafood develops fishy notes from TMA/TMAO; meat and poultry can show rancid or bloody odors from fat oxidation during processing or storage; plant proteins (soy, grains) often have beany or bitter notes. Some raw materials carry inherent odors, and high heat or fermentation can create burnt or rancid notes. Yeast extract can significantly reduce these off-flavors and improve overall flavor.
How to achieve it?
Yeast extract removes off-flavors through unique mechanisms and notable efficacy. Its amino acids, peptides, and nucleotides can react with or adsorb odor compounds, reducing perception via masking and neutralization. Its own rich taste also balances overall flavor and diverts attention from off-notes, effectively mitigating unpleasant odors in seafood, meat, and plant proteins, improving flavor quality and consumer acceptance.
